School Daze

Yesterday my son entered his 1st grade year at a new school


and of course I was a nervous wreck but not my little man.

No.

He walked in like he owned the place, went straight to class, sat down, and didn't even look back.

Yeah, it broke my heart but I am thrilled that he transitioned into his new school well. 


I was going to blog about this yesterday but with all the excitement going on we were all passed out before 9.  

I can't seem to get into the school routine this year.  Maybe because we moved recently? I dunno but I almost had a nervous breakdown this morning.  Hopefully I will figure this out.

7th Wedding Anniversary

Seven years married to this man.  



Seven years of "I love you"


Seven years of good (and not so good) times.


But even in the not so good times, I'm glad he was by my side.


We have survived 5 moves, three dogs, and a kid.



With this man by my side, I feel like I can take on the world.  

Since Sunday is the day before school and we had a lot of last minute running around we celebrated on Saturday with a dinner on the lake and watching the sunset.


Here's to another 70+ years my love!

Happy National S'mores Day! | Recipe


This may be the best day of the year.  Who doesn't love a good S'more?  With that warm ooey gooey chocolate and marshmallow - delicious.  But seriously it's too hot to sit around a campfire and roast marshmallows so I have the next best thing - S'mores dip. This is one of the easiest recipes (if we can even call it that).





I didn't technically measure anything.  I bought a regular sized bag of chocolate chips and marshmallows and have enough left over to bake another dip.  You can also try different types of chocolate to change the flavor of the dip.

10 Adorable Tooth Fairy Ideas

Right this minute I am an emotional mess.  My little boy is turning into a man.  Okay maybe not quite there but he did reach a new milestone - he lost his first tooth. 

I will not cry.  I will not cry.  I will not cry.  Maybe just a little.



I then got into crafty mom mode and tried to find something clever and cute for his first tooth fairy experience and being that we are currently vacationing with our family I didn't want something too in depth. I found ten ideas I really loved.

 I ended up going with this idea.  I saved the receipt image on my computer and then opened it in a photo editing site or software. [I use Pic Monkey.] Then I just used a handwriting font to enter all his information on to the image.

Popcorn Cake | Recipe



I was a little skeptical when I heard of a popcorn cake.  I was automatically thinking of a cake mix with popcorn in it, maybe a butter frosting.  Not a pretty picture.  But all it basically is is a popcorn ball with candy and pretzels in cake form.  It was really simple and easy to make.  Also a very cost efficient dessert or snack.

Ingredients:

- popcorn (I popped my popcorn on our stove in a little bit of oil.  You can use microwave popcorn but I am unsure of flavor and consistency.)
- 10 oz bag of marshmallows
- mix-ins of your choice (Resse's pieces, pretzels, and white chocolate chips)
- 1/3c oil for melting marshmallows but you will also need very little to coat the bottom of your pan if you are doing it yourself
- 1/2 (one stick) butter



01.  Spray bundt pan with cooking spray.  Set aside.
02.  Pop your popcorn.  Remove any unpopped or partially popped kernels. You know the hard stuff.
03.  Place your popcorn in a big pan or bowl.  Add your mix-ins.  (I broke my pretzel sticks into thirds)
04.  Melt butter, oil, and marshmallows in a pan on low.  Stir occasionally.
05.  Pour marshmallow mixture over popcorn and mix-ins.  Mix with spoon or hands. (I sprayed my hands with cooking spray beforehand.)
06.  Press your popcorn cake into the bundt pan.  Make sure to press it down so it will form the cake but not too hard - you want to make sure you can remove the cake.
07.  Let the cake cool then invert onto a serving dish.  



I am in love with this recipe.  My whole family loves it, its easy to make, and reminds me of making popcorn balls with my grandmother.  You can substitute any mix-ins you want.
