Recipe: Loaded Chicken and Potatoes


I recently saw this recipe on Facebook from Kathryn at Singing through the Rain.  I have never tried any Facebook recipes but my brother has and says he has never had a recipe he didn't like.  I changed it up just a little bit to better suit our tastes and it was fantastic.




Ingredients:
1# boneless, skinless chicken breasts (cubed into 1" pieces)
8 medium skin on red potatoes (cut into about 1/2' cubed pieces)*
1/3 c olive oil
1/2 medium onion, chopped
1 1/2 tsp salt
1 tsp black pepper
2 tbsp garlic powder
2 tbsp hot sauce

Topping:
1 c crumpled bacon**
2 c shredded cheese***
1 c diced green onion




Directions:
01.  Preheat over to 400 degrees.
02.  Spray a 9X13" baking dish with cooking spray.
03.  In a large bowl, mix together olive oil and seasonings.  Add the cubed potatoes, onions, and chicken. Stir to coat.
04.  Put mixture into the baking dish and bake for 60 mins, stirring every 20 mins, until chicken is fully cooked and potatoes are crispy and brown on the outside.  
05.  While the potatoes and chicken are cooking, fry the bacon.
06.  Once the potatoes and chicken are fully cooked, top with the cheese, bacon, and green onions.  
07.  Continuing baking for about 5 mins or until the cheese is melted. 


Notes:

* Make sure your potato cubes are about the same size to allowing for cooking evenly

**I normally buy turkey bacon but decided against it for this recipe.  As you can see I bought Bar S bacon because it was reasonably priced but I did not like it at all.  I would not recommend using that brand.

***I used mild cheddar because it was on sale but you can use any blended type, mild, or sharp cheddar.
